Eggs Benedict with home made hollandaise sauce

Very easy to make but delicious lunch dish, the hollandaise sauce is easy to make and the added cayenne pepper makes it nice and punchy.

Ingredients

For the hollandaise sauce

  • 2 egg yolks
  • 1/4 lemon, juiced
  • Pinch of salt
  • Pinch of cayenne pepper
  • 55 grams of melted butter

Other ingredients

  • 4 large eggs
  • 2 English breakfast muffins
  • 4 slices of ham

Directions

  1. Beat egg yolks, lemon juice, salt and cayenne pepper together in a microwave-safe bowl until smooth. Slowly stream melted butter into the egg yolk mixture while whisking to incorporate.
  2. Heat in microwave for 15 to 20 seconds; whisk. If sauce separates after microwaving, add a splash of water and whisk until combined.
  3. Slice the muffins in half and toast them
  4. poach all 4 eggs
  5. Put the slices of ham on the muffins, top them with the poached eggs and pour over the hollandaise sauce.
